Heat olive oil in cast iron skillet. Season room temperature steak liberally on both sides with salt, pepper and garlic powder. Preheat oven to 430 degrees.
Sear steak for 3 to 4 minutes per side over high heat. When finishing up the second side, add 3 tablespoons of butter and a handful of thyme sprigs to the pan; spoon thyme butter over steak.
Place skillet in the oven for 6 minutes or until a thermometer inserted reads 140 degrees.
To make sauce:
Simmer heavy cream on medium-low heat in a saucepan, stirring to prevent curdles.
Add ¼ cup of the blue cheese crumbles to the pan and stir til mostly melted. Stir in Worcestershire and butter til melted together.
Add remainder of blue cheese crumbles and remove pan from heat; the heat from the sauce should continue to melt the blue cheese without liquefying everything. Stir in thyme leaves and spoon sauce over steak to serve.
