Blue Cheese Butter Steak

New York Strip w/ Blue Cheese Butter

Ingredients
  

For the meat:

  • New York strip steak bone in
  • 1 tbsp olive oil
  • 1 tbsp salt
  • 1 tbsp pepper
  • 1 tbsp garlic powder
  • 3 tbsp butter
  • fresh thyme sprigs to taste

For the sauce:

  • ½ cup heavy cream
  • ½ cup blue cheese crumbles divided
  • 3 tbsp butter
  • 1 tbsp Worcestershire sauce
  • 1 tbsp thyme leaves

Instructions
 

For the meat:

  • Heat olive oil in cast iron skillet. Season room temperature steak liberally on both sides with salt, pepper and garlic powder. Preheat oven to 430 degrees.
  • Sear steak for 3 to 4 minutes per side over high heat. When finishing up the second side, add 3 tablespoons of butter and a handful of thyme sprigs to the pan; spoon thyme butter over steak.
  • Place skillet in the oven for 6 minutes or until a thermometer inserted reads 140 degrees.

To make sauce:

  • Simmer heavy cream on medium-low heat in a saucepan, stirring to prevent curdles.
  • Add ¼ cup of the blue cheese crumbles to the pan and stir til mostly melted. Stir in Worcestershire and butter til melted together.
  • Add remainder of blue cheese crumbles and remove pan from heat; the heat from the sauce should continue to melt the blue cheese without liquefying everything. Stir in thyme leaves and spoon sauce over steak to serve.
