How It Works
Once a month we will ship you different cuts of our premium ranch-to-table beef. Enjoy a unique beef culinary experience replete with Texas style preparation suggestions and cuts of beef you won’t find most places.
Each of our products comes with a unique experience:
Presidio Steak Subscription
You will receive 4 New York Strips, 2 Rib Eyes, 4 Flank Steaks (London Broil), and 8 Burgers.
Premium Grill Subscription
You will receive 4 Butcher’s Cut Filet Mignons, 4 boneless New York Strips, 4 Sirloin Steaks, and 8 Burgers.
Family Feast Subscription
You will receive a cut of Chuck Roast, 4 Flat Iron Steaks, 4 Flank Steaks, 4 Burgers, Premium Ground Beef, and Stew Meat.
We ship the third week of every month. You will be sent an email with the shipping information so that you can track your subscription and know exactly when it arrives.
We are open for pick up the third week of the month. If you can send an email a few hours ahead of your arrival, then we can make sure everything is pulled and ready when you arrive. If not, then it shouldn’t take us long to put your order together. We are located at 801 E. Holland Ave in Alpine, TX. During that week, we will be open 9am-4pm, Monday-Friday.
Grass fed and grass finished beef means that the cattle has never eaten any grain. The finishing process addresses the last few months of the animal’s life. It is in these last few months that most of the weight is gained. Grass finishing takes longer because the animal doesn’t gain weight as fast on the grasses and thus it is more expensive to reach full weight.
Our traditional beef is grass-fed, pasture grazed until the last 90 days. We then bring them in from the pasture to our FWTCC where we feed him a mixture of Alfalfa and Sudan until the very end of the process. The last few weeks we begin to include some grain in the feed mix. Unlike the industrial feed lots, we do not use commodity grain pellets full of chemicals. We are a small craft beef farmer and use craft grains from local farmers.
If grass-fed beef is currently out of stock, can I start my subscription with traditionally finished beef and switched to grass fed when it is available?
Yes, if you send us an email letting us know you would like to switch to grass-fed when it’s available, then we will notify you when the next round of grass-fed beef is available and you can opt in or out at that time. Our grass-fed beef comes from the Dixon Water Foundation. These steers are finished on the land, a process that takes an extra six months. Further, the breeding of the cattle at the Dixon Water Foundation is extraordinary. Casey Wade, the ranch director, has been nationally recognized for his work in seeking to breed cattle that are suited to the desert grasses and are of the right stature for the environment while creating the highest levels of beef quality. Our traditional beef is sourced from ranches around Marfa and finished by FWTCC in Marfa. We finish with alfalfa and a little corn at the end. We are a small, very clean finisher of cattle and the welfare of the animal is carefully monitored.

The reality of today’s beef market is that corporations have centralized control of the beef market and changed it right under our noses. In 2016 the beef lobbyists successfully removed the Country of Origin Labeling requirements from beef packaging. You no longer have the ability to know what country your grocery store beef comes from. That should concern you for a number of reasons. First, beef raised outside the USA is not subject to the same protective laws cattle here are subject to. Animal treatment, chemicals used to fatten the steer or other purposes are common practices and you as a consumer have no way of knowing.
Second, if the beef is processed outside the country then there are health concerns with the proper handling of the animal and what that could mean to your health.
There is a vast difference between the industrial beef world (even when the beef is raised in the USA) and the craft beef products from independent ranches. Corporate beef operations work toward a goal of low prices sacrificing often animal welfare and health concerns of consumers.
The USDA label only tells you that the animal was processed under the inspection of a government supervisor, adhering to federal standards, and the marbling quality of the beef. It ignores the industrial feed lots that feed heaven knows what chemicals and the country of origin.
We worked for over a month with attorneys and accountants to determine the best path for the mission we had. There were pros and cons for each path. One of the limitations of a nonprofit organization is that you are obligated to only solicit donations. The beef would have been a gift for the donation and that was only going to accomplish part of the vision we had for FWTCC. Yes, we want to create a stream of capital that can feed people around the world, but we also want to bless the ranchers and the customers who are a part of what we are doing. We believe strongly, one might say passionately, in the ranch to table movement which removes the middle layers that add chemicals, sometimes mistreatment of animals and a lot of unknowns to the beef you are eating. As a for profit business, we are free to talk about the quality of the beef, the value of an experience that is straight from the ranch, and still create resources that help feed people.

You have the ability to cancel at any time by logging into your account and managing your subscription under the Subscriptions tab. You will need to make sure that your cancellation notice is received by the tenth of the month so that you do not receive that month’s shipment of beef.
